Meatless Meat loaf

Note: There are many types of vegetarians out there you can substitute where needed to match your style. I can not say what it will taste like because this is how I do it and I like the way it tastes.

    1-2 bags of morningstar farms crumbles
    1 bag fresh or frozen broccoli or spinach
    1 med container Ricotta cheese
    3 cups Mozzarella Cheese
    1 container of Bread crumbs ( crumbled ritz cracker or generic brand also work really well)
    4 eggs
    Vegetarian brown gravy ( can buy in store or I have a recipe later on)
    

Mix 2 cups of mozarella cheese, 1 container of rocotta cheese, cook veggie of your choice from above, and eggs. Mix 1 to 2 bags of morningstar ffarmscrumbles and 2 eggs in a separate bowl. Add bread crumbs until you can make balls that stick together well and ddon'tfall apart. flatten on the ccounter top put cheese and veggie mix in the center and roll up. Put in an oven pan. preheat oven to 400 degrees cover with vegetarian gravy and put the left over cheese/veggie mix into the bottom of the pan. put the rest of the mozarella on top. Cook for about 1 hour or until the Meat loaf has  a browned look to it
